Reserve: the longest time in the barrel
In winemaking the Reserve gets the longest time in the barrel, and depending on the variety some of it in new barrels.
White wine
Our only white reserve wine matures in three 300-litre barrels. A new one is added every year.
Red wine
Depending on the variety, 20 to 80 percent new barrels are used: more for full-bodied varieties such as Merlot, Cabernet and Syrah, less for Pinot noir and St. Laurent. The vintage also plays a role.
The wine stays on the fine lees in the barrel until shortly before bottling.
Little sulphur, plenty of time
Because malolactic conversion in the barrel is often only finished in spring and we add sulphur only after that, the red Reserve wines need little sulphur. Usually it is 40 to 70 milligrams of total sulphur.
A wine counts as stable from around 30 milligrams of free sulphur. The art is to keep the free sulphur high and the bound sulphur low. The values are on each of our wines' own pages.
For red wine we work with 300-litre barrels and are gradually switching to 500 litres. The larger the barrel, the more you taste the wine and the less the wood.
Merlot, Pinot noir and the cuvées Furore and Intuition come from Ried Hutweide, St. Laurent and Zweigelt from Ried Gestein. The Furore cuvée has had its own label since 2019.
All our Reserve wines are in the Frühwirth Dark tasting pack, together with wines from the Selection and the Purist natural wine line.
