Classic: bottled early, drunk young
For us, Classic means drunk young. Our winemaking is geared to that: the wines are bottled early and keep their freshness.
White wine
The wine stays on the gross lees until about December, is then racked and fined and lies on the fine lees until March. Bottling is at the end of March, beginning of April. There is no malolactic fermentation. So the malic acid stays, and with it the freshness.
Red wine
Aged on the fine lees and bottled early so the wines are drinkable young.
What Classic means in the glass
With Classic the variety should take centre stage. Because we do no malolactic conversion here, the malic acid stays in the wine. It brings the fruit and the fresh drive that make these wines what they are.
Over the years we have tried aromatic yeasts again and again. Each time we went back to the neutral yeast, because it shows the variety and adds nothing of its own.
The grapes come from our organic vineyards around Teesdorf. In the shop and in the Vinothek many Classic wines come not only in the 0,75-litre bottle but also in the small 0,375-litre one.
The Frivolo belongs here too, our Gemischter Satz (field blend) of several varieties. It is the young wine among our wines and made off-dry.
At the Heuriger, Classic wines are on the drinks list and served by the glass. Which ones are open right now is shown in the menu on the website.
If you want to taste your way through the line: the Frühwirth Light tasting pack includes our Classic wines, together with other wines from our range.
